Raw zucchini Rolls with cashew cheese and broccoli sun-dried tomato pesto! DELICIOUS! " Warning" : Make enough cuz they disappear quickly ( esp. if kids around! ) The question is : who's gonna have the last one ?
Ingredients:
Sun-dried tomato and broccoli pesto:
1/2 head of broccoli
2 tablespoons sun dried tomatoes
1 tablespoon olive oil
Salt, pepper and dried herbs, to taste
Water, as needed

( You have to blend all ingredients in your food processor or blender until smooth)
Cashew cheese:
2/3 cup cashews
2 peeled garlic cloves
1 tablespoon fresh lemon juice
2-3 tablespoons nutritional yeast
Salt and pepper, to taste
Water, as needed

( Now blend all ingredients in your food processor or blender until smooth and thick, adding as little water as possible)
Ohhh yummy! I've tried these before and you were my inspiration! They taste so damn good, so healthy and they vanished right away!!! :):):)
